Crumbed Marinated Chicken

Ingredients

  • 250g Chicken breasts
  • 3 Garlic Cloves
  • 2cm of Fresh Ginger
  • 2 Tablespoons of Whisky
  • 2 Tablespoons of Light Soy Sauce
  • 1 Cup of Bread Crumbs - recommend from home made bread
  • 1/2 red Chilli (seeds removed)
  • 1/2 teaspoon of Barts Lemon Grass - in Sun flour Oil

 

Directions:

In a blender mix together Garlic, Ginger, Whisky, Light Soy Sauce, Chilli and Lemon Grass. Remove all fat, skin and all dark bits off chicken. On pieces remaining cut into pieces and add blended mix. Leave for preferably two hours to marinade. Once some time has passed (minutes or hours) add the bread crumbs and mix. The bread crumbs to absorb any excess marinade mix. On a baking tray, place some tinfoil (shiny side up, spray lightly with Oil, then add crumbed chicken. Place into a preheated over at 180 degrees for about 20 minutes, until chicken is cooked through (but not over cooked). Enjoy. Chicken can be replaced with turkey breasts or quorn.
