Lemon's Jungle Curry
Ingredients
- 1.25 Water
- 4 Oxo Chicken Stock Cubes
- 1.5 Teaspoons of Barts Lemon Grass in Sunflour Oil
- 2 Tablespoons of finely grated fresh Ginger
- 3 Kaffir Lime Leaves (or 1 Tablespoon of Lemon Juice)
- 1 Red Chilli (seeds removed and finely diced)
- 1 Teaspoons of finely diced Coriander
- 1 Small Onion (finely diced)
- 2 Large Cloves of Garlic
- 6 Tablespoons of Fish Sauce
- 1 Tablespoon of Barts Tamarind Pulp
- 1.5 Teaspoons of Sugar
- 175g of Cooked Peeled Prawns
- 6 large Mushrooms (peeled and cut into bite size pieces)
- 6 Baby Corn (cut into bite size pieces)
- 6 Stringless Beans (cut into bite size pieces)
Directions:
Stir fry Onion, Mushrooms, Baby Corn and Beans. Cook for five minutes then add water and chicken stock. Slowly add all other ingredients (excluding Prawns) and simmer for 10 minutes. Finally add Prawns cook for another two minutes until hot. Dish is best served with Boiled Rice.
