Sausages / Stuffing

Ingredients

  • Either 350g of Quorn or Two Chicken Breasts
  • 2 Egg Whites
  • 1 teaspoon of Sage
  • 1 teaspoon of Thyme
  • 1 teaspoon of Garlic Salt
  • 1/2 teaspoon of Rosemary
  • 1 tablespoon of Italian Herbs
  • 1 Oxo Chicken Stock Cube
  • 1/2 Lage Onion or 1 Small
  • 2 Apples cored and peeled
  • 1 fresh Garlic Clove
  • 1 teaspoon of fresh ginger
  • 250g of Bread Crumbs (made from fresh bread - NOT Toasted)

 

Directions:

In a bowl add egg whites, spices, stock and mix well. Blend Bread to make Bread Crumbs (If you are making Stuffing more bread crumbs are needed and the type of bread you are using - home made or shop bought - will affect the quantitiy needed. It pays to make more bread crumbs the first time). Set Bread Crumbs aside. Blitz Onion. Apple, Garlic and Ginger into a paste, then add to egg white & spice mix and combine. Then process the Quorn or Chicken and add to Egg White mix and again combine. Finally add Bread Crumbs gradually to make make moist mix for sausages, or more for a firmer mix to make stuffing. Shape and place upon a try lined with tin foil lightly sprayed with water and oil. Spray over with oil and water again to encourage a light crunch - carefull not to over spray. Place in the oven for 20-25 minutes until brown, turning once. Finally if you would like a bit of extra spice in your stuffing add an extra garlic clove, some chilli flakes, lemon and orange rind or tumeric, cumin and fresh corriander. Enjoy.
