In Reflection... Onwards and Upwards

It has been a while since I have posted anything onto the Just4joco site. I apologise if you have thought I had forgotten you. I have not and I am very sorry to have neglected things for so long.

Since October 08 to now, due to unforeseen circumstances (just love that phrase that explains absolutely nothing) I have found myself facing stresses unimaginable. Those who have MS will know how violent stress can be to the potential onset of relapses and how hard it is not to stress about getting stressed!

It has taken much effort and time to manage and reassess the things that were causing this roller coaster of emotions. I have learnt a lot about myself, which in turn, has introduced me to new opportunities, helping me to be the best, give the best.

During this time I discovered Patrick Holford's, New Optimum Nutrition Bible. A fantastic book that re emphasises the potential benefits associated to the Swank and modified Swank diets. I got my allergies tested (The York Test Laboratories) and found the results amazing. I learnt that some of the fatigue I was experiencing was due to an allergy I have to egg whites! Flax seeds soaked in water (omega 3,6 & 9) is a brilliant alternative.

I have also been included on a MS trial to find out whether Cognitive Behavior Therapy can help relieve MS fatigue. I have definitely found benefit with CBT even though I am only upto week 4 of 8 sessions. The last time I spoke to Louise, there were still a few places (sorry UK residents only).

Now, a single Mum, I really appreciate the benefits associated with following a low / no saturated fat diet. The potential damage stress and worry can cause is frightening. Being able to maintain a secure and positive base for Kyle, now four, has not been easy. The importance of not just relying on my diet to maintain good health, but making sure I also meditate and exercise, has been difficult, but worth every second invested.

You will notice in the next week a few affiliated links being added to Just4joco. Hopefully they will help cover server costs and maintenance of the website. All support given to these is gratefully appreciated

These events and others, have taught me a lot about myself and what I want to achieve. My fingers are crossed good fortune is on my side.

Also, seeing Just4joco recipes in the Rotary / MS Society Cookbook (District 1020). Helping to fund specific medical research into Multiple Sclerosis. However if you could you help me choose which four recipes I should send, I would be most grateful.

Recipes I am thinking about submitting include:

10) Smoked Salmon and Tomato Pasta

I promise that there are many new recipes waiting to be posted on to Just4joco, I have just started Twitter and Prawn Toast will be the next recipe to be add added to the recipes section.

I will also be attending the MS Society Fife first AGM, later this month.

In reflection I feel that I have conquered a mountain with only a few meters remaining. I have returned even more determined to make eating well, living positively, more easily achievable.
