Ingredients
- 17 Basil Leaves
- 2 Cloves of Garlic
- 1-2 tablespoons of Pine Nuts
- 1/4 teaspoon of Salt
- 1-2 tablespoons of Extra Virgin Olive Oil
- 1 tablespoon of White Wine Vinegar or Lemon Juice
Directions:
Place all ingredients in a blender and process making pesto.
Julie's Tuna Pasta
Ingredients
- 1 Onion (chopped)
- 1 Red Pepper (sliced)
- 2 Garlic cloves
- 1 Tin of Tuna (in spring water)
- 1 Tin of Tomatoesr
- Tomato Pureet
- Salt, Pepper & Italian Seasoning to taste
Quorn & Cashew Nut
Ingredients
- 1 large Onion
- A mix of vegetables (Broccoli, Mushrooms, Courgette, Beans, Peppers, Baby Corn, etc)
- 350g Quorn, Chicken Style Pieces
- 1/2 a Chicken Oxo Stock Cube
- 200ml of Water
- 3 tablespoons of light Soy Sauce
- 2 tablespoons of Oyster Sauce
- 1 teaspoon of Sugar
- 1/2 teaspoon of Chilli Flakes
- 1 teaspoon of cornflour (mixed with small amount of water).
- 50g of Cashew Nuts.
Directions:
Butternut Squash Soup
Ingredients:
- 1 litre of Chicken Stock (can be replaced with vegetable stock)
- 500g Butternut Squash
- 2 Potatoes
- 2 Carrots
- 1 large Onion
- 1 teaspoon of Cinnamon
- 2 cloves of Garlic
- 1 teaspoon of Ginger
- 1 teaspoons of Honey
- 1 teaspoon of Curry Powder (this can be increased to add more spice)
- 3 teaspoons of Paprika
- 3 bay leaves (whole to be removed once vegetables are cooked)

- 150g Strong Bread Flour – White
- 250g Self Raising Flour

- 1 teaspoon of Garlic Granules*

- 350ml Warm Water
